Ingredients
  

  • 1 cup long-grain white rice
  • 4 cups whole milk
  • ½ cup sugar
  • 1 cinnamon stick
  • ½ teaspoon vanilla extract
  • 1 pinch salt
  • Ground cinnamon

  • Rinse the rice: Begin by rinsing the rice under cold water to remove excess starch. This will help the rice cook evenly and prevent it from becoming too sticky.
  • Cook the rice: In a medium saucepan, combine the rinsed rice and 4 cups of milk. Add a pinch of salt and bring the mixture to a simmer over medium heat, stirring occasionally. Once it starts to simmer, reduce the heat to low, cover, and let it cook for about 20 minutes, stirring occasionally to avoid sticking.
  • Sweeten the mixture: After the rice is tender, add the sugar and the cinnamon stick. Stir well to ensure the sugar dissolves. Let the mixture continue to simmer, uncovered, for about 10 minutes, until it thickens to your desired consistency.
  • Add vanilla and cinnamon: Once the pudding has thickened, remove it from the heat. Stir in the vanilla extract and remove the cinnamon stick. If you prefer a stronger cinnamon flavor, you can sprinkle a little ground cinnamon in at this stage.
  • Serve and enjoy: Serve the arroz con leche warm or allow it to cool in the fridge for a few hours. Garnish with a sprinkle of ground cinnamon for extra flavor and color.
