Prepare the Noodles or Rice (Optional)Cook your egg noodles or rice according to package instructions. Drain and set aside.
Sear the BeefIn a large skillet, heat the olive oil over medium-high heat. Add the beef strips in batches to avoid overcrowding the pan. Sear for 2-3 minutes until browned on all sides. Remove the beef from the pan and set it aside.
Cook the VegetablesIn the same skillet, add butter and sauté the diced onion for 3-4 minutes, until softened. Add the sliced mushrooms and cook for another 4-5 minutes until they’re tender and browned. Stir in the garlic and cook for an additional minute.
Make the SauceSprinkle the flour over the vegetables and stir it in to create a roux. Cook for 1-2 minutes, allowing the flour to absorb the fat. Gradually add the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 5 minutes until the sauce thickens.
Combine the Beef and SauceReturn the beef to the skillet, along with any juices from the plate. Stir in the sour cream, Dijon mustard, paprika, salt, and pepper. Simmer for another 5-7 minutes, allowing the flavors to meld and the beef to become tender.
ServeServe the beef stroganoff over the prepared noodles, rice, or mashed potatoes. Garnish with fresh parsley if desired.
