Mix in the vanilla extract (and lemon zest if using).Gradually add the dry ingredients to the wet ingredients in alternating batches, starting and ending with the dry ingredients. Add the milk in between, mixing until just combined after each addition Bake the Cake:Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula. Bake in the preheated oven for 30–35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely. Prepare the Frosting:While the cakes are cooling, make the frosting. In a large mixing bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, 1 cup at a time, and continue to beat until light and fluffy. Add the vanilla extract and a pinch of salt, then gradually add the heavy cream to achieve your desired frosting consistency. Assemble the Cake:Once the cakes are completely cooled, place one cake layer on a serving platter. Spread a generous amount of frosting over the top. Add the second layer of cake and frost the top and sides of the entire cake.
