Equipment

  • Large pot
  • Large pan or skillet
  • Wooden spoon or spatula
  • Colander
  • Cheese Grater
  • Measuring spoons and cups

Ingredients

  • 12 oz Cavatappi pasta
  • 2 tbsp Olive oil
  • 3 cloves Garlic
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese
  • ¼ cup Fresh basil
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 1 tsp Lemon zest
  • Chicken breast

Instructions

  • Cook the Pasta:Bring a large pot of salted water to a boil. Add the cavatappi and cook according to the package instructions (usually about 8-10 minutes), until al dente. Drain the pasta, reserving about ½ cup of pasta water for the sauce. Set aside.
  • Prepare the Sauce:While the pasta is cooking, heat the olive oil in a large pan or skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  • Add the Cream:Pour in the heavy cream and bring to a simmer. Allow it to cook for 3-4 minutes, stirring occasionally, until it thickens slightly.
  • Combine Pasta and Sauce:Add the cooked cavatappi to the pan with the cream sauce. Toss well, adding reserved pasta water a little at a time to help loosen the sauce, if needed.
  • Add Parmesan and Seasonings:Stir in the grated Parmesan cheese, and season with salt and pepper to taste. If you're using lemon zest, sprinkle it over the pasta for a refreshing twist. Continue tossing the pasta until everything is well-coated.
  • Serve:Divide the pasta among plates, and garnish with fresh basil and additional grated Parmesan if desired. Serve hot!

Notes

  • Don’t Overcook the Pasta: Be sure to cook the cavatappi al dente to avoid mushy pasta. It will continue to cook slightly when mixed with the sauce, so a firm texture is ideal.
  • Use Fresh Parmesan: Freshly grated Parmesan will melt better and provide a more intense, nutty flavor compared to pre-grated cheese.
  • Reserve Pasta Water: The starchy pasta water helps thicken the sauce and ensures a silky smooth texture, so don’t forget to save a bit before draining the pasta.
  • Feel Free to Customize: Add your favorite vegetables, like spinach, mushrooms, or peas, to make the dish even more colorful and nutritious.
  • Make It Creamy or Lighter: For a richer sauce, use full-fat heavy cream, but you can substitute half-and-half or a lighter cream for a less indulgent version without sacrificing flavor.
