Equipment

  • Two shallow bowls
  • Frying pan or skillet
  • Oven-safe baking dish
  • Tongs
  • Meat mallet or rolling pin
  • Knife
  • Cooking thermometer

Ingredients

  • 4 boneless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups seasoned breadcrumbs
  • ½ cup Parmesan cheese
  • 2 cups mozzarella cheese
  • 1 1/2 cups marinara sauce
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Fresh basil

Instructions

  • Prep the Chicken:Begin by prepping your chicken breasts. If they’re too thick, gently pound them with a meat mallet or rolling pin to an even thickness (about 1/2 inch). This helps them cook evenly.
  • Set Up Breading Station:In one shallow bowl, place the flour. In another shallow bowl, beat the eggs. In a third bowl, combine the breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and pepper.
  • Bread the Chicken:Dredge each chicken breast in the flour, making sure it’s fully coated. Dip it into the beaten eggs, letting any excess drip off. Finally, coat the chicken in the breadcrumb mixture, pressing lightly to ensure it sticks.
  • Fry the Chicken:Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown. Don’t crowd the pan—fry the chicken in batches if needed. Transfer the fried chicken to a paper towel-lined plate to drain any excess oil.
  • Assemble the Dish:Preheat your oven to 375°F (190°C). Place the fried chicken breasts in a greased baking dish. Spoon marinara sauce over each piece of chicken, then sprinkle mozzarella cheese generously on top.
  • Bake the Chicken Parmesan:Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly browned.
  • Serve:Remove from the oven and garnish with fresh basil if desired. Serve hot over pasta, with a side of garlic bread, or as a stand-alone dish.

Notes

  • Don’t Skip the Double Coating: Make sure your chicken is coated with both flour and breadcrumbs. This gives it that irresistibly crispy texture that everyone loves.
  • Use Fresh Mozzarella: Fresh mozzarella melts better and provides a creamier texture than pre-shredded cheese.
  • Control Oil Temperature: When frying, make sure your oil is hot but not smoking. If it’s too cool, the breading will soak up oil and become soggy. If it's too hot, the breading may burn before the chicken cooks through.
  • Make It Your Own with Seasonings: Feel free to adjust the seasoning in the breadcrumbs to your taste. Fresh garlic, Italian seasoning, or even a pinch of red pepper flakes for a little heat can make this recipe even more flavorful.
  • Let the Chicken Rest: After frying, allow the chicken to rest for a few minutes before serving. This helps keep the juices inside and ensures every bite is tender and juicy.
