Ingredients
  

  • 3 lbs chuck roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 2 cups beef broth
  • 1 cup red wine
  • 3 carrots
  • 3 potatoes
  • 1 onion
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary

Instructions
 

  • Preheat oven to 325°F (163°C).
  • Season the chuck roast with salt, pepper, garlic powder, and onion powder.
  • Heat olive oil in a Dutch oven over medium-high heat and sear the roast on all sides until browned.
  • Remove the roast and sauté onions and garlic until fragrant.
  • Deglaze the pot with red wine (if using), then add beef broth and Worcestershire sauce.
  • Return the roast to the pot and add carrots, potatoes, thyme, and rosemary.
  • Cover and cook for 3–4 hours until the meat is tender and shreds easily.
  • Remove herbs, adjust seasoning, and serve warm.
