  • 4 Chicken breasts
  • 2 tbsp Olive oil
  • 3 cloves Garlic
  • ½ cup Sun-dried tomatoes
  • 1 cup Heavy cream
  • ½ cup Chicken broth
  • ½ cup Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 12 oz Pasta
  • 1 tbsp Fresh basil

Instructions
 

  • Cook the Pasta:
    Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package directions, typically around 10 minutes. Drain and set aside.
  • Prepare the Chicken:
    Season the chicken breasts on both sides with salt, pepper, and Italian seasoning. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the chicken and cook for about 6-7 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside to rest. Once slightly cooled, slice the chicken into strips or bite-sized pieces.
  • Make the Sauce:
    In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the sun-dried tomatoes and cook for another 2-3 minutes. Pour in the chicken broth and bring to a simmer. Let it reduce for about 2-3 minutes.
  • Add the Cream:
    Reduce the heat to low and stir in the heavy cream. Allow the sauce to simmer gently for 5 minutes, until it thickens slightly. Stir in the grated Parmesan cheese and red pepper flakes (if using), adjusting the seasoning with more salt and pepper to taste.
  • Combine Pasta and Chicken:
    Add the cooked pasta and sliced chicken to the sauce. Toss gently to coat everything evenly in the creamy sauce. Cook for another 2-3 minutes to warm through.
  • Serve:
