Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 1 large egg
  • ½ cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper
  • Fresh parsley

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
  • Prepare the breading stations:
    In a shallow bowl, place the flour. Season it with a pinch of salt and pepper.
    In a second bowl, crack the egg and whisk it.
    In a third bowl, combine the parmesan cheese, breadcrumbs, garlic powder, onion powder, and a little more salt and pepper.
  • Prep the chicken:
    If needed, gently flatten the chicken breasts using a meat mallet or rolling pin to ensure even cooking.
    Dredge each chicken breast in the flour, then dip it into the egg, letting any excess drip off, and finally coat it in the breadcrumb mixture. Press down slightly to ensure the coating sticks well.
  • Cook the chicken:
    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, carefully add the chicken breasts and cook for 2-3 minutes on each side until they are golden brown.
    Transfer the chicken to the prepared baking sheet and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the coating is crispy.
  • Serve and garnish:
    Remove the chicken from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley and serve with your favorite sides.
