Equipment

  • Medium-sized pot or saucepan
  • Stirring spoon or spatula
  • Measuring cups and spoons
  • Can opener
  • Knife

Ingredients

  • 1 block Velveeta cheese
  • 1 can Rotel diced tomatoes with green chilies
  • 1/2 cup milk
  • 1/2 pound ground beef or sausage
  • 1/4 cup chopped jalapeños

Instructions

  • Melt the Velveeta: Cut the Velveeta cheese into small cubes and place them in a medium-sized pot.
  • Add the Rotel and Milk: Pour in the can of Rotel (including the juice) and the milk. Stir everything together over medium heat until the cheese is fully melted and the ingredients are well combined.
  • Add Meat (Optional): If you’re adding ground beef or sausage, stir it into the dip at this point. Make sure the meat is fully cooked before adding.
  • Stir and Simmer: Continue stirring the dip occasionally as it simmers. If it gets too thick, add a little more milk until it reaches your desired consistency.
  • Optional Toppings: Once the dip is smooth and hot, stir in any optional toppings like jalapeños or fresh cilantro, if desired.
  • Serve: Pour into a serving dish and serve immediately with tortilla chips, veggies, or your preferred dippers.

Notes

  • Use Fresh Ingredients: For extra flavor, use fresh jalapeños instead of canned, or even fresh tomatoes in place of the canned Rotel, though you may need to adjust the cooking time.
  • Watch the Heat: If you don’t like things too spicy, opt for the mild Rotel or skip the jalapeños. Adjust the seasoning to your taste.
  • Consistency: If the dip is too thick, add a little more milk or even some sour cream to reach the perfect consistency. You want it creamy but not runny.
  • Low-Fat Alternatives: For a lighter version, swap Velveeta for a lower-fat cheese, and use skim milk or non-dairy milk to cut down on fat and calories.
  • Keep Stirring: Stir occasionally while the dip simmers to ensure the cheese doesn’t stick to the bottom and burn. A non-stick pot can help with this!
