Ingredients
  

  • 4 cups chicken broth
  • 2 large eggs
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • ¼ teaspoon freshly ground black pepper
  • Salt
  • ¼ teaspoon freshly grated nutmeg
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Prepare the Broth: In a medium pot, heat the chicken broth over medium heat until it begins to simmer. Add a pinch of salt and freshly ground black pepper to taste.
  • Whisk the Eggs: In a separate bowl, crack the eggs and whisk them together with the Parmesan cheese until smooth. If you like, add a pinch of freshly grated nutmeg for a little extra warmth.
  • Add the Egg Mixture: Slowly pour the egg mixture into the simmering broth while stirring gently with a fork or whisk. Continue stirring to create delicate ribbons of eggs as they cook in the hot broth.
  • Simmer and Serve: Once the egg ribbons have formed (about 2–3 minutes), turn off the heat. Taste the broth and adjust seasoning if needed with salt and pepper.
  • Serve: Ladle the Stracciatella soup into bowls, and garnish with chopped fresh parsley for a burst of color and freshness. Serve immediately with crusty bread or as a light appetizer.
