Ingredients
  

  • 4 medium Yukon Gold potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 cup heavy cream or milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic
  • Fresh herbs

Instructions
 

  • Prepare the Potatoes: Wash and peel the Yukon Gold potatoes. If making mashed potatoes, chop them into smaller chunks for faster cooking. For roasting, cut them into wedges.
  • Boil (for Mashed Potatoes): In a large pot, bring water to a boil, and add a pinch of salt. Add the potato chunks and cook for 15-20 minutes or until tender. Drain well and return them to the pot.
  • Roast (for Roasted Potatoes): Preheat the oven to 400°F (200°C). Toss potato wedges in olive oil, salt, pepper, and minced garlic (if using). Spread them in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway through, until golden and crispy.
  • Mash (for Mashed Potatoes): Mash the boiled potatoes with a potato masher or hand mixer until smooth. Stir in butter, cream or milk, and season with salt and pepper to taste.
  • Serve: Serve the roasted Yukon Gold potatoes alongside your favorite main dishes, or enjoy the mashed version as a hearty side.
